Thermal shocking involved heating then rapidly cooling the coffee during the fermentation process.

High in the hills of Bruselas, Huila, the Lasso family has spent three generations tending the land that would become Finca El Diviso. What began as a small family plot is now a place of experimentation and discovery, where Nestor Lasso, his brother Adrian, and their longtime friend Jhoan Vergara push the boundaries of flavor.

Nestor and his family have developed unique processes within specialty coffee production, and are known for their big fruit-bombs, but still exceptionally clean coffees. Together, their knowledge and experience to improve growing techniques and production quality has changed their corner of the specialty coffee market.
