Producer Santiago Patiño is a third generation grower using regenerative methods and fermentation innovation to push Colombian coffee forward. El Ocaso uses regenerative, organic practices—like beneficial microbes for pest control and composting organic waste to enrich the soil.

Shade grown and slow ripened, these cherries develop deep sweetness and layered complexity. It’s a bold, funky expression of place, passion, and process. This Castillo underwent a 110-hour anaerobic natural process, unlocking intense notes of red wine, molasses, and cherry compote.

TLDR: Light roast anaerobic. Medium high funk. Wildly juicy.
