The Return Of:
Rwandan Shyira Farmers
Shyira was established in 2017 by Muraho Trading with the goal of producing a distinctly different expression of Rwandan coffee while creating lasting impact for producers in Nyabihu. Though it’s the smallest washing station operated by brothers Gaudam and Carthick Anbalagan, it sits at some of the highest elevations in Rwanda, surrounded by volcanic soil, dense fog, waterfalls, and the mountains famous for their gorilla habitats.
Working with nearly 1,900 smallholder farmers, Shyira’s high altitude and cool climate create ideal conditions for slow cherry maturation and vibrant acidity. For this lot, cherries were fermented beneath a tightly sealed plastic sheet, with water poured over the top to create an anaerobic seal. This allowed oxygen to escape without reentering the tank. After 48 hours, the sheet was pierced, releasing the water over the cherries to cool them and slow fermentation, resulting in a creamy, fruit forward cup layered with florals.
